Vegan While Out: Fire Bowl Cafe-Denver, CO

 

 Denver is absolutely breathtaking! 

I had an awesome birthday week in Denver & Colorado Springs with my sisters. The people were friendly and every restaurant we ate at had obvious vegan choices on the menu. One fondue restaurant (we didn't have a chance to dine here but I checked out the menu) even offered tofu & portobello mushrooms in place of chicken & beef.  

I spent most of the trip "being in the moment" AKA wildin' out with my sisters, so I only took pictures of 2 meals the whole trip.

The first was a Chipotle burrito with crack rice (this stuff is too addicting not to be laced with crack), fajita, black beans, guacamole, and lettuce...

I side eye a $7 burrito & those crazy long lines but Chipotle is still my go-to spot when it comes to fast food.

 

We also had lunch one day at Fire Bowl Cafe.  The food was so fresh and the service was great.

Fried tofu salad...

Mixed greens, Asian slaw, rice sticks, tomato, cucumber, peanuts and cilantro and a tangy Asian dressing.

LOVED it!

 

I also enjoyed 2 Thai summer rolls with tofu, vermicelli noodles, lettuce, Thai basil, cilantro & carrots.

 

Good food, folks, and lots of laughs in Denver.

I can't wait to go back with the hubby and kids.
