I was on Steamy Kitchen and say a recipe for fried quinoa with ham, eggs, and peas. I love fried rice but having it with quinoa is just as good (probably better health wise, too).
I had a bowl of leftover quinoa in the fridge and it took less than 15 minutes to throw together a delicious lunch. Plant-based style, of course. :-)

Fried Quinoa
Ingredients (serves 4)
- 2-3 cups quinoa, cooked and cold
- 1 large clove garlic, minced
- 2 teaspoons soy sauce
- 1/2 cup frozen peas, frozen is ok
- 1/2 cup frozen carrots, frozen is ok
- 1/3 cup onion, chopped
- 1 tbsp cooking oil
- Black pepper, to taste
Instructions
•Heat wok (or large skillet) with oil on medium heat. Saute the onion and garlic until translucent. Add in peas and carrots and cook for about 4 minutes (or until warm).
•Mix in cold quinoa and soy sauce and fry everything together until warm.
•Add in additional soy sauce and black pepper, to taste.
