Main Ingredient Episode #2-Vegan Sausage Dinner Recipes

I started a segment on my Youtube channel that I hope will help with vegan meal planning.  I will feature 2 recipes with the same main ingredient.

I've posted before about how much I enjoy Field Roast sausage because they're delicious and make meal planning easy for me.

In the below episode you will find recipes for a Potato Bake & Veggie Stir-fry.

Both recipes are ready within 30 minutes and feature simple and tasty ingredients.

Veggie Stir-Fry

Ingredients (Serves 4)

  • 1 large bell pepper, chopped
  • 1 small red onion, chopped
  • 4 vegan sausage links, chopped
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • ½ tsp salt
  • 1 tsp oregano

Instructions

Heat a large skillet on medium heat and add olive oil.

Sauté bell pepper and red onion for 2 minutes.

Add in vegan sausage and cook for 8 more minutes. During the last 2 minutes, add in garlic, salt, and oregano.

Serve over rice or quinoa

Main Ingredient Episode #1: Portobello Burger & Portobello Lasagna

First up, Portobello mushrooms....

Portobello Burgers

Cook Time: 30

Ingredients (6 Portobello Burgers)

  • 6 Portobello mushroom caps, wiped clean
  • ½ cup soy sauce
  • 1/3 cup Worcestershire sauce (make sure to get a vegan version because the conventional has anchovies)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 6 hamburger buns

Instructions

Mix all the ingredients together (expect the mushrooms) in a small bowl to make a marinate.

Remove the stem from the mushrooms, and pour marinate in a gallon sized Ziploc bag.

Add the mushrooms to the bag and marinate for 30 minutes.

Place a frying pan on the stove on medium heat and add a teaspoon of oil to prevent sticking.

Cook the mushrooms for 3 minutes on each side-adding more marinate after flipping the mushroom over.

Enjoy with lettuce, tomatoes, and other fresh vegetables on a hamburger bun.
