Got 5 Minutes? No-Bake Donut Holes

This is one of our favorite recipes!  I can quickly throw these together for the boys to snack on in the afternoon or as dessert after dinner. 

Recipe adapted from Ani Phyo's book, Ani's Raw Food Kitchen

Ani Phyo uses 2 cups of pineapple and dates but 1 cup of each is plenty in my experience.

Donut Holes No bake/fry (raw vegan)

Ingredients

  • 1 ¾ raw almonds
  • ½ teaspoon sea salt
  • 1 vanilla bean, scraped or 1 teaspoon vanilla extract
  • 1 cup dried pineapple, chopped (it's ok to skip this step if you don't have dried pineapple)
  • 1 cup Medjool dates (or any other dates available)
  • 1/3 cup plus ¼ shredded coconut

Instructions

In food processor, place almonds, salt, and vanilla. Process into a fine powder. Slowly add chopped pineapple and dates mixing well. Place in a large bowl. Mix in 1/3 cup shredded coconut.

To serve, use your hands or an ice cream scooper to form donut holes. Roll holes in ¼ cup shredded coconut.

5 Quick Kid-Friendly Snack Ideas

Healthy snacks are a great way get your child(ren) to eat better without much effort.  Here are 5 snacks my boys request often.

*Donut Holes - This snack takes literally 5 minutes to make and requires no baking-Donut holes are a very healthy snack because the ingredients are dates, dried pineapple, almonds, and coconut flakes. 

*Carrot Sticks or other Fresh Vegetables with Hummus-You can buy your own hummus or make it in about 5 minutes

*Chickpea Popcorn -This is one of Alvin's favorite snacks- You just toss cooked chickpeas with a tbsp of olive oil, season well with cumin, paprika, and garlic powder and bake on a cookie sheet for about 25 minutes on 400º F. We call it chickpeas popcorn because my kids said the texture reminds them of popcorn.

*Fresh Fruit & Almond Butter or Peanut Butter-Kids love to dip their food in sauces and spreads-give them a few of their favorite fruit options on a platter with their spread of choice

*Homemade Granola- No baking required-This recipe also takes about 5 minutes to prepare and is a lot cheaper (and healthier) than the boxed version.

5-Minute Lunch Box #4: Donut Holes-No Cooking Required

These donut holes are not only good for lunch boxes but my chipmunks enjoy them as an afternoon snack and breakfast treat.  This snack is made from fruit and almonds, so it's a great alternative to snack cakes and candy.

Ingredients:

1 ¾ cup raw almonds

½ teaspoon sea salt

1 vanilla bean, scraped (I used a tablespoon of vanilla extract instead)

2 cups dried pineapple, chopped

2 cups pitted dates

1/3 cup shredded coconut

Directions:

In food processor, place almonds, salt, and vanilla. Process into a fine powder first.  Slowly add chopped pineapple and dates, mix well.

Place in a large bowl and mix with shredded coconut. The donut holes will last a week in the fridge but never more than a day in my house. :-)
