Got 5 Minutes? Make A Tomato & Clementine Salad

Until I saw Cassandra make this recipe on Youtube, I would have never thought to put these ingredients together.  I made it for lunch today, and not only was it delicious, but it only took about 5 minutes. It's the perfect combination of sweetness & crunchy.

You only need a few simple ingredients...

1 clementine

1-2 tomatoes

2 tablespoons raw sunflower seeds

1 teaspoon extra virgin olive oil

1/2 teaspoon garlic powder (I also used 1/2 teaspoon of fresh garlic, minced)

1/2 teaspoon onion powder

1/2 teaspoon black pepper

 Make adjustments according to taste.  I love sunflowers seeds, so I probably use more than most.

To make the dressing: Whisk together the garlic & onion powder, pepper, and olive oil in a small bowl. Squeeze in juice the half of your clementine and whisk again.

Slice the whole tomato and arrange on a plate. Cover with the remaining clementine slices and dressing. Sprinkle on the sunflower seeds and enjoy!

It's just that simple. :-)
