Personal Pizzas

Growing up, I loved dining in at Pizza Hut on a Friday night. Eating supreme pizza with extra cheese and drinking out of those red plastic cups made me feel like a kid in heaven. Does anyone remember the jukebox? I always begged my mom for quarters to pay for a few tunes.

Another reason I enjoyed Pizza Hut so much is because I participated in the Book It! program, and was able to get a FREE personal pan pizza with my certificate.  I loved the freedom of not being required to share with my siblings.

Pizza Hut sure has changed since those days.  We took the chipmunks there a few years ago and the service was subpar, shabby decor, and the restaurant was empty of patrons. They still had the jukebox, but my kids didn't seem interested in choosing songs (I blame iPod lol).  

These days I prefer to get pizza a better way. I decided to make personal pizzas for the boys last Saturday for lunch.  Just like me, they liked the idea of choosing their own toppings (Simon is now a fan of green peppers on his pizza).

 

 


  Ingredients:

English muffins (I learned the hard way that Thomas English muffins are not vegan. Make your own here, use Food for Life,  or store brand options are sometimes vegan too.)

1 cup of spagetti sauce

1/2 teaspoon olive oil (for each English muffin half)

Toppings of your choice-We used green peppers, red onion, spinach, vegan cheese

 This was my 1st time using Follow Your Heart cheese, which wasn't bad at all.  I prefer the taste of this cheese over Daiya (it was a bit cheaper too)

Directions:

Preheat your oven at 400º

Split the English muffin into halves and drizzle olive oli on them

Heat the muffins for about 4 minutes in the oven

Remove from oven and add spagetti sauce and toppings.

Place back into the oven and broil 3-5 minutes until cheese is melted.

Healthier and more budget friendly than any pizza restaurant.
